My Favorite Meal Prep Recipes Part 1

I often post randomly on Instagram about my meal prep endeavors and sometimes share some of my favorites but here’s a list of some of the meals I most commonly make. I am in the process of re-organizing my Pinterest page so I can more easily share with all my followers. Please let me know what you think of these recipes!!

SIDE DISH RECIPES

Hummus This is specifically an avocado hummus but you can replace the avocado with just about anything.  A few of my other favorites are roasted red peppers or sun dried tomatoes.

Quinoa Pizza Crust it’s not the same as real pizza crust but this is a tasty gluten-free alternative.

Restaurant Style Salsa I cannot recall the last time I bought a jar of salsa at the store.  I love this recipe and I used fire roasted canned tomatoes from Muir Glen.

Taco Seasoning I cannot recall the last time I bought a packet of taco seasoning, this stuff is great and you probably have most of the ingredients in your pantry EVERY DAY.



EASY CROCK POT RECIPES

Crock Pot Salsa Chicken  No link needed, toss raw chicken breasts (or thighs/legs), top with a cup of salsa per pound of chicken (I use the restaurant salsa recipe above), and cook on low for 6 hours. Take out chicken, shred with fork, and place back in with the salsa. This works great as a meat for tacos or on top of spinach/lettuce for a salad.


Italian Stallion This recipe is very versatile, you can skip the make your own marinara and just toss some raw chicken and pour a jar of pre-made sauce on top or you can just make the marinara and use it in other ways. For the marinara, I omit the red pepper flakes and use fire roasted canned tomatoes from Muir Glen.


Sweet Potato Black Bean Turkey Chili This chili is great and you don’t have to brown the turkey before putting it the crock pot...it’s actually more flavorful if you cook from raw.


MAIN DISH RECIPES

Balsamic Chicken & Vegetables Love this for the variety of flavors and that it allows me to cook my vegetables along with my protein.

Egg Roll in a Bowl The recipe calls for sausage, but I’ve done with ground turkey, sausage, ground beef, and chicken (separately) and all have turned out fantastic.  It’s great for a healthier alternative to Chinese food.


Honey Balsalmic Chicken Tenders This is a super easy recipe and also kid-friendly.


Hummus Crusted Chicken This one is quick and easy (or quicker and easier than listed)…you can use frozen veggies and store-bought hummus. I generally make my own (with the above recipe) and use a variety of vegetables.


Italian Sausage Spinach Meatloaf This recipe uses ground pork & pork Italian sausage but I’ve done it with ground turkey & turkey Italian sausage with fantastic results (I will warn you the fat cooks off on the top so I generally scrape it off and toss it out) … I combine this with the marinara recipe from the Italian Stallion recipe.

Pork Tenderloin with Apple Salsa This recipe is great and I generally make a double batch of the salsa because it’s fantastic with tortilla chips.  When I’ve made this with friends during a meal prep party, they sometimes leave me with none :(

Sweet Potato Lasagna These are a bit tedious to make (mandolin slicing sweet potatoes takes time) but they are the bomb taste-wise and can be prepped, frozen, then cooked at a late time.
